Does anyone have a recipe called pork with lemon and garlic Esssential an Italian cookbook?
I have to cook a pork fillet dinner tonight – I remember that part of a recipe with Parma ham, lemon, garlic and nuts – I think the recipe has a little alcohol in it, but I can not remember any of it – Please Please give me a clue! P54 was in the essential Italian cookbook
Do I have the book, but it is so close to what you're looking for? (It is an American recipe, what it means roasting rack.) Pork with lemon and garlic 1 ½ pounds pork tenderloin cup chopped almonds tablespoons olive oil 2 3 ½ ounces of prosciutto crudo 2 cloves garlic 1 tablespoon finely grates oregano 2 lemons rind 4 shallots 1 cup of ham or chicken broth 1 teaspoon sugar with a sharp knife, cut steak pork into 4 equal pieces. Lightly pound piece of pork with a meat mallet or the end of a roller that crushed tp. Cut horizontal cut on each piece of pork for make a pocket. Place the almonds on a cookie sheet. Lightly toast the almonds in a medium hot grill for 2-3 minutes. Mix the almonds with 1 tablespoon oil, ham, garlic, oregano, finely grated lemon. Pour the mixture into the pocket of pork. Heat the remaining oil in large skillet. Add the shallots and cook for 2 minutes. Add pork to skillet and cook for 2 minutes on each side. Add the ham or chicken broth to pan, simmer, covered, for 30 minutes or until meat is tender. Remove meat from pan and reserve. Add the lemon zest and sugar to skillet and simmer for 3-4 minutes. Pour lemon sauce over the pork fillets and serve immediately.
